All-in-one cutting drum with universal mincer

The world-leading trade fair for the food industry, ANUGA, was abuzz with breakthrough technologies aiming to reduce time and optimize processes, which Meat Tech Pro could face during the visit. One of the innovative designs is the all-in-one cutting drum equipped with a universal mincer, which earned accolades from the GERMAN AGRICULTURE ASSOCIATION – DLG. The system promises to redefine the standards of efficiency and speed in meat grinding.

Industrial mincers for mincing fresh meat, cooked meat up to 85°C, fat or frozen meat blocks down to -25°C and other food products have their fixed areas of application in food processing. In addition to energy requirements, versatility, performance and end-product quality are key assessment criteria for this technology.

The all-in-one mincer processes fresh material and frozen blocks down to -25 °C without the need to change the working screw or the cutting set. Gentle processing and a clear cutting pattern are achieved at very effective hourly outputs with any starting material. The different consistencies, e.g. fresh and frozen, can be processed simultaneously or with a time delay.

The cutting drum consists of an extended working screw and a cylindrical perforated drum with a pneumatic change-over valve. This is used instead of the usual cutting set of knives and perforated plates. It enables the simultaneous shredding of the raw material to the desired size and the sorting out of foreign bodies such as plastic particles or foils as well as hard components such as tendons, cartilage and bone fragments.

Due to the minimal distance between the screw extension and the perforated drum, the raw material is cut without contact and thus with minimal stress on the product and minimal heating (1°C to a maximum of 3°C). In addition, 15-20% more product throughput, a higher yield and fewer by-products or residues are characteristic features.

Since the cutting drum can be used alongside conventional cutting sets in the universal mincer, it is possible for only one machine to function as a shredder, block breaker and soft separator. This offers maximum flexibility with reduced time and energy consumption, reduces space requirements and ultimately results in lower investment costs.

The applicability of this technology is also possible in other food industries in the medium term.
